PKU recipe 2: Pâtes pesto (Pesto Pasta)

I, along with some of my other friends with PKU, LOVE PASTA!! Sometimes is can be hard to mix up a plain pasta dish, especially if you are a parent trying to encourage your child to have a few veggies too. This recipe is my go to when all I want is pasta, but I also know that I need my greens. And you can add any vegetables you want or take out the ones that you don't like.


Low protein pasta, cooked (any kind you prefer)

50g cauliflower

50g broccoli

1/4 cup corn kernels

1/4 cup peas

Sundried tomatoes, chopped

Baby spinach (as much as you want)

50g mushrooms, sliced

1 Tbsp basil pesto

salt and pepper to taste


1) Boil water in a pot on high heat. Add preferred pasta to boiling pot and cook until pasta is soft.

2) Cut up vegetables and fry in a pan over medium-high heat, with a bit of olive oil.

3) When vegetables are fried, add baby spinach and let it wilt. Add pesto, salt and pepper. Mix in well.

4) Add in cooked pasta and mix together over low heat.

5) Serve with herbs and enjoy.
